Deliciously Buttery Pancakes

  • 1 cup all-purpose flour
  • 2 tsp. baking powder
  • 5 Tbsp. sugar, divided
  • 3/4 cup 2% milk
  • 1 egg, slightly beaten
  • 2 Tbsp. I Can’t Believe It’s Not Butter!® Deliciously Simple™

Combine flour, baking powder and 1 tablespoon sugar in medium bowl. Whisk in milk, egg and 1 tablespoon melted I Can’t Believe It’s Not Butter!® Deliciously Simple™.

Melt remaining 1 tablespoon I Can’t Believe It’s Not Butter!® Deliciously Simple™ in large nonstick skillet over medium heat. Drop batter into skillet by 1/4 cupfuls. Cook pancakes over medium heat, turning once, until done, about 3 minutes. Set aside and keep warm.

*Tip: For extra buttery pancakes, top with an additional dollop of I Can’t Believe It’s Not Butter!® Deliciously Simple™ just before serving.

  • 2 slices whole wheat bread

  • 1 slice tomato
  • 1/2 cup fresh spinach leaves, rinsed, patted dry, and thinly sliced
  • 1 egg, cooked as desired

Toast bread, then evenly spread with I Can’t Believe It’s Not Butter!® Deliciously Simple™.

Top 1 slice toast with tomato, spinach, egg, then top with remaining toast.

Pineapple Shrimp

  • 1 lime
  • 2 Tbsp. I Can’t Believe It’s Not Butter!® Deliciously Simple™
  • 1 lb. peeled and deveined uncooked jumbo shrimp
    (tails left on if desired)
  • 1/2 cup pineapple juice

Grate 1 tablespoon peel and squeeze 1 tablespoon juice from lime; set aside.

Melt I Can’t Believe It’s Not Butter!® Deliciously Simple™ in large nonstick skillet over medium-high heat and cook shrimp 3 minutes. Turn shrimp; add pineapple and lime juices. Cook until shrimp turn pink, about 2 minutes. Remove shrimp to serving platter and set aside.

Cook liquid in skillet over medium-high heat until reduced to 1/4 cup, about 3 minutes. Remove from heat; stir in lime peel and drizzle over shrimp.

  • 4 boneless, skinless chicken breasts
  • 1/2 tsp. dried thyme leaves
  • 1 cup chicken broth
  • 1 Tbsp. cornstarch
  • 1 Tbsp. grated lemon peel

Melt 2 tablespoons I Can’t Believe It’s Not Butter!® Deliciously Simple™ In large nonstick skillet over medium-high heat.

Sprinkle chicken with thyme; add to skillet and cook 8 minutes; turning once, until browned. Combine broth and cornstarch in medium bowl; pour into skillet and bring to a boil.

Reduce heat; stir in lemon peel and remaining 1 Tbsp. I Can’t Believe It’s Not Butter!® Deliciously Simple™ and cook 7 minutes or until chicken is thoroughly cooked and sauce has thickened.

  • 1 lb. Brussels sprouts, trimmed and halved lengthwise

  • 1/2 cup sliced almonds
  • 2 cloves garlic, thinly sliced

Preheat oven to 425°.

Combine all ingredients in large bowl, tossing until evenly coated.

Arrange on large baking sheet.

Roast 25 minutes or until brussels sprouts are tender and almonds are lightly toasted.

Banana, Walnut & Date Muffins

  • 2 cups whole wheat flour
  • 3/4 cup sugar
  • 1/2 cup old fashioned oats [or quick oats]
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1 1/4 cups mashed ripe bananas (about 3)
  • 2 eggs
  • 3/4 cup plain nonfat yogurt
  • 1/3 cup I Can’t Believe It’s Not Butter!® Deliciously Simple™
  • 1 tsp. vanilla extract
  • 1/3 cup coarsely chopped walnuts
  • 3/4 cup chopped pitted dates

Preheat oven to 375°. Line muffin pan with paper muffin liners; set aside. Combine flour, sugar, oats, baking powder, baking soda and cinnamon in large bowl; set aside.

Combine bananas, eggs, yogurt , I Can’t Believe It’s Not Butter!® Deliciously Simple™ and vanilla in medium bowl. Stir into flour mixture just until combined. Stir in walnuts and dates.

Spoon batter into prepared pan, mounding slightly. Bake 25 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire rack; remove from pan and cool completely.

Fresh from the New York City Wine & Food Festival, chef and food blogger Kristina Vanni has the dish on the season’s hottest food trends. The mastermind behind Better Homes & Garden’s Better Recipes blog, she knows a thing or two about how to live well while spending less and never sacrificing anything. So we jumped at the chance to sit down with her and hear what’s cooking on the culinary world’s runway!

What kind of food trends did you see at the Wine & Food Festival?

KV: I saw a lot of upscale versions of iconic, classic dishes. There were gourmet burgers at the Burger Bash, and high-end tacos at Bobby Flay’s Tacos and Tequila event. I swooned for a Gouda Mac and Cheese at the Grand Tasting as well as an "Ultimate Grilled Cheese Sandwich" that knocked my socks off!

What was the most surprising food you sampled?

KV: Definitely the "Brioche Ice Cream Sandwich" from High Road Craft Ice Cream at the Grand Tasting. At first glance it looked like a cross between a slider and a cream puff, but it tasted like frozen baklava on a bun! The ooey-gooey creation is pistachio-coated honey ice cream inside a grilled mini brioche bun. Heaven!

What was your reaction when you saw new Deliciously Simple™ from I Can’t Believe It’s Not Butter!® there?

KV: I was excited to see a spread made with natural, simple ingredients!

How would you describe the taste?

KV: The texture was light and spreadable while the taste was rich and buttery - perfect!
